Our pyshki café at 118 Nevsky Prospekt is ideal if you have just arrived in St. Petersburg. Moskovsky railway station and the Galeria shopping mall are a couple of minutes’ walk away, and soon you are holding fresh pyshki, St. Petersburg’s hot yeast rings dusted with powdered sugar. Ploshchad Vosstaniya and Mayakovskaya metro stations are close by.

Walking from Moskovsky railway station: go out onto Ploshchad Vosstaniya (Uprising Square) and cross to the other side. We are right opposite the station, next to the Oktyabrskaya Hotel, with the entrance facing the square. If you can’t spot the building, give us a call and we’ll guide you.
Watch the Soviet pyshki machine at work
Our machine stands in plain view by the counter. Come closer and watch the whole cycle: the dough dispenser squeezes out a ring of dough, which drops into hot oil and rides round on the carousel. For the first half of the circle the pyshka cooks on one side, then a chute flips it over and it finishes on the other. The ready pyshka slides down a second chute into the tray. Hardly any oil gets inside, so it comes out light, closer to bread.
This is a genuine Soviet machine, assembled in Kyiv. Production stopped in 1991, and no new ones are made. The first ones were built at military plants under the conversion programme, when after the war the country was switching its factories to peacetime machinery. Every working machine today has been tracked down, bought and restored by hand. Wondering whether it is the real thing? Ask to see the factory nameplate with the year of manufacture and serial number; we are always glad to show it.
Each of our machines bears the name of a Russian emperor or empress. Here on Nevsky Prospekt it is “Elizaveta Petrovna” (Empress Elizabeth), named after the daughter of Peter the Great. Ask for her by name, and the staff at the counter will tell you where she came from and how old she is.
The crunch, the warmth, the smell of hot dough and powdered sugar all reach you right at the counter. Children can’t take their eyes off the little chute where the ready pyshki slide down, and grown-ups reach for their phones. If you have just arrived and don’t know where to start exploring the city, start here: a pyshka is one of the first things to try in St. Petersburg, and nowhere else will you find one made like this, straight from a machine in plain view.

Guests often come in with a doubt: the old pyshki café on Bolshaya Konyushennaya St. is a city legend, and we opened only recently. So we don’t try to prove anything with words.
